Blue Fin Tuna

is the most expensive and some say the most delicious species of tuna.  Hon-maguro as the Japanese call it is the name of the biggest tuna and one of the largest bony fishes. Bluefins occur in a wide range of sizes, from young ones of 5 to 30 kg, to 12-year-old giants weighing over 600 kg. Bluefin schools usually consist of fish that are close together in age and size. They can be found all over the world in both cold and subtropical waters, and are considered by some scientists to occur in two subspecies. They are highly migratory.  Large adults can cross the Atlantic Ocean from the Caribbean to Norway in a single season.  Tuna are very active, high energy fish that swim at speeds of more than 60 km/hour. The majority of the maguro served in sushi resturants is imported from around the world In 2000, a tuna caught in the traditional fashion in the north of Japan made the news. This single tuna fish weighted around 200 kilograms, and was sold for 20 million yen, equal to 200,000 US dollars.  Maguro, Toro, Chu-toro and Ootoro are Japanese names referring  to different parts of the tuna fish with different fat content.  Hon Maguro tuna is a top grade tuna – over 200lbs in size. The meat of this tuna is a very dark red, almost as dark as a red wine. The bright red maguro is taken from the fish’s back. It is very low in fat and high in iron.
